for dough, stir flour onto a work place and make a well in center,cut butter into bits and place in the well along with egg yolk, salt and water.using a large knife,mix all the ingredient coarsely,until it look like crumbs. quickly knead into a smooth dough before the butter become too soft. sharp dough into a ball,wrap in plastic wrap, and refrigerate for about 30 minutes.
